![]() ![]() ![]() ![]() This is a very elegant side dish. It is really especially welcome in the winter when tomatoes are relatively poor in flavor. The dish is also very simple and quite colorful. Slice in half and place sliced side up in shallow baking pan: 2 large tomatoes Sprinkle over the top of each tomato half: I tsp. olive oil I tsp. bread crumbs I tsp. grated parmesan cheese dash of garlic salt 1/2 tsp. dry oregano 1/2 tsp. basil, fresh if available optional: 1/2 tsp. sesame seeds, or a pinch of ground red chile Place in hot oven or under preheated broiler till very hot and top browns a bit. CHEFS NOTE: These can be baked ahead of time, covered with plastic wrap and pulled out for broiling as the final step in dinner preparation.
