TUNA LOAF

Tuna loaf is one of those friendly recipes that are simple, homey and done with what you have laying around. Tuna loaf is also very good food, and economical to boot. This Tuna Loaf recipe is from an old friend, Becky Ballantine. It can also be made with canned salmon, or any leftover cooked fish.

Dribble some White Cheese Sauce over a couple slices of Tuna Loaf, garnish with a dash of paprika, a couple slices of lemon and a bit of parsely. Serve with a green salad and a dry white wine. Simple and excellent.

To do a Tuna Loaf, first add to a heavy frying pan:

  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • Tbl butter
  • Saute gently until onion is translucent, then in a small bowl put:

  • 1 egg
  • 3/4 cup milk
  • Beat together, then add to the celery mix along with:

  • 2 1/2 cups French bread in 1/2" cubes.
  • 1 or 2 cans (6 oz) tuna, well drained.
  • Toss gently together, breaking up tuna somewhat. Pack gently into a loaf pan and bake covered at 350' for about a half hour, then uncover and bake another half hour. While Tuna Loaf is baking, do:

    WHITE SAUCE

    In a small frying pan melt
  • 2 tbl butter
  • When melted, stir in:

  • 2 Tbl flour
  • Mix well together, then add:

  • 1 1/2 cups milk
  • Stir over heat until thickened and bubbly, stir in:

  • 1/2 cup grated yellow cheese
  • dash of Tabasco Sauce
  • good grind of white pepper
  • 1/2 tsp salt
  • Bit of Vermouth, Sherry or white wine. (Optional)
  • Serve with Tuna Loaf.
