CHICKEN CASHEW

  • 2 Tbl peanut oil

Heat in heavy wok until very hot. Add:

  • 1/2 small onion, fine slice

Stir fry about 5 seconds, add:

  • Small handful raw cashews,

Stir fry about three seconds, add:

  • 6 - 8 oz chicken breast, 1/2" dice
  • tsp fresh ginger, minced
  • Dash hot chile powder or a few little hot dry chiles

Stir fry about 45 seconds, add:

  • 2 Tbl dry Sherry heated in ladle
  • dash of sugar
  • Dash of Ajino Moto, MSG. Optional
  • 2 Tbl. onion soup or beef broth
  • Bit of cornstach in water to thicken

Stir fry about 10 seconds till a bit thickened. Sprinkle over Chicken Cashew:

  • Tsp. sesame oil

Serve over rice.
