CHICKEN CASHEW
Heat in heavy wok until very hot. Add:
- 1/2 small onion, fine slice
Stir fry about 5 seconds, add:
- Small handful raw cashews,
Stir fry about three seconds, add:
- 6 - 8 oz chicken breast, 1/2" dice
- tsp fresh ginger, minced
- Dash hot chile powder or a few little hot dry chiles
Stir fry about 45 seconds, add:
- 2 Tbl dry Sherry heated in ladle
- dash of sugar
- Dash of Ajino Moto, MSG. Optional
- 2 Tbl. onion soup or beef broth
- Bit of cornstach in water to thicken
Stir fry about 10 seconds till a bit thickened. Sprinkle over Chicken Cashew:
Serve over rice.
