This cookbook was written just after we sold Baron's of Old Town Restaurant here in Albuquerque. As owner and Head Chef I had recipes published in Gourmet, Cuisine, and Bon Apetite. Those recipes are in this cookbook. All of the recipes will be great when prepared with elk, antelope, deer or other venison, and certainly also with beef in years when Lady Luck does not grace the hunt.

I have included full menus, and the recipes for everything in all of the menus are here, including my Rum Chocolate Mousse. (We sold over $40,000 worth of this wonderful stuff every year at Baron's, so you know our customers thought it was good!)
